Summary

ISO 22000 is an international standard for food safety in organisations of all sizes, throughout the entire food chain. From food production, extraction, processing and packaging to transport, sale and preparation, every organisation can benefit from the proven recommendations of this standard. It builds on the Codex Alimentarius recommendations for setting up a HACCP system. The basis is formed by preventive programmes (PRP, prerequisite programme), good hygiene practice and good manufacturing practice.

Development

The current version of ISO 22000:2018 was published on 18 July 2018.

With this version, the structure of the chapters was adapted to the structure of other internationally established management system standards, such as ISO 9001. This facilitates the integration of food safety requirements with other systems such as quality management, occupational safety and environmental management.

ISO 22000:2005 is adapted to the existing ISO 9001:2008 standard in terms of its structure, but relates strictly to the food supply chain and here to food safety. In this respect, ISO 22000 corresponds to the existing GFSI food safety standards, but unlike these, it is more open in its scope of application and covers the entire food chain "from farm to fork", including all sectors supplying into this chain, whereas the GFSI standards are strictly limited to food production. PAS 220 (Publicly Available Specification) is a new addition to ISO 22000 for the "Prerequisite programmes on food safety for food manufacturing", a supplement to the audit, thanks to which ISO 22000 is also recognised by the GFSI. ISO TS 22002 "Prerequisite programmes on food safety" has recently become available as a supplement to ISO 22000 certification with the same background.
